Ingredients
- ( 2 cup) Green Beans
- ( 2 tbsp) Vegetable Oil
- ( 0.5) Chorizo
- ( 2 cloves) Garlic
- ( 2 medium) Tomato
- ( 4 large) Egg
- ( 4 tortillas) Corn Tortilla
- ( 1 medium) Brown Onion
Method
- Bring a pot of water to the boil.
- Meanwhile prepare the beans by removing the tips and then slicing into 3cm lengths.
- Add the beans to the boiling water and cook for 2-3 minutes, until bright green but still firm.
- Heat the oil in a pan over medium-high heat and fry the chorizo until it is cooked, about 5 minutes.
- Add the diced onion and crushed garlic and fry for another 5 minutes, then add the green beans and tomatoes.
- When the tomatoes are softened, add the eggs and scramble until cooked to your liking. Serve with tortillas
