- ( 500 grams) Silken or soft tofu
- ( 1 stalk) Lemongrass, raw
- ( 1 long) Red chilli, raw
- ( 2 cloves) Raw garlic, peeled
- ( 4 tbsp) Vegetable oil
- ( 5 tsp) Reduced-salt soy sauce
- ( 1 bunch) Fresh coriander
- ( 1 cup) Brown rice
- ( 1 tsp) Ground black pepper

Ingredients
- ( 500 grams) Silken or soft tofu
- ( 1 stalk) Lemongrass, raw
- ( 1 long) Red chilli, raw
- ( 2 cloves) Raw garlic, peeled
- ( 4 tbsp) Vegetable oil
- ( 5 tsp) Reduced-salt soy sauce
- ( 1 bunch) Fresh coriander
- ( 1 cup) Brown rice
- ( 1 tsp) Ground black pepper
Method

- Cook rice, following the instructions on the packet.
- Drain the tofu and cut into 3cm chunks. Set aside.
- Finely dice the garlic.
- Combine the finely diced, garlic, lemongrass, chilli, and ground pepper in a bowl. Use half of this mixture to marinate the tofu — coat the tofu in the mixture.
- In a pan, add the oil and fry the tofu until it is golden brown on all sides. Then remove the tofu from the pan.

- To the same pan, add the remaining lemongrass mixture and cook for 2–3 minutes.
- To serve, place the crispy tofu onto a bed of rice. Top with the lemongrass mixture and soy sauce.
