- ( 6 cups) Canned Butter Beans
- ( 1 medium) Brown onion
- ( 3 cloves) Garlic, peeled
- ( 4 tbsp) Oil Olive

- ( 6 tsp) Tomato paste, salt reduced
- ( 1 can) Tinned Tomatoes
- ( 1/3 cup) Water
- ( 5 cups) Spinach, fresh
- ( 1 bunch) Parsley
- ( 1/2 bunch) Mint

Ingredients
- ( 2 medium) Chicken Breast
- ( 6 cups) Canned Butter Beans
- ( 1 medium) Brown onion
- ( 3 cloves) Garlic, peeled
- ( 4 tbsp) Oil Olive
- ( 1 tsp) Paprika
- ( 6 tsp) Tomato paste, salt reduced
- ( 1 can) Tinned Tomatoes
- ( 1/3 cup) Water
- ( 5 cups) Spinach, fresh
- ( 1 bunch) Parsley
- ( 1/2 bunch) Mint
Method
- To poach the chicken, bring a pan big enough to fit all of the chicken to the boil. You can flavour your poaching liquid with herbs, garlic, and/or stock.
- Once the water has boiled, allow to cool for two (2) minutes.
- Add the chicken and cover.
- In a pan, add the oil, diced onion and garlic.
- Cook until the onion is soft and translucent.
- Add the paprika, tomato paste, canned tomatoes and water.
- Cook for 3-5 minutes
- Add the butter beans and chopped spinach and stir through the tomato mixture.
- Cook until the beans are heated through and the spinach is tender.
- Serve with the poached chicken on top of the gigantes.
