Ingredients
- ( 1 medium) Lean chicken breast, raw
- ( 3 large) Egg
- ( 10 florrets) Raw cauliflower
- ( 5 medium) Brown onion, raw and peeled
- ( 4 tbsp) Olive oil
- ( 1/2 tsp) Ground black pepper
- ( 1 tsp) Cooking salt
- ( 4 sheets) Filo pastry
Method
- Preheat oven to 180 degrees (C).
- Slice the onions and cut the cauliflower into florets.
- Heat a large pan and add half the oil and the sliced onions. Fry until the onions are soft and sweet.
- Add the chicken and then add enough water to cover the chicken. Bring the water to the boil and add the cauliflower florets.
- Cook until the water has almost entirely evaporated (disappeared into steam) and the chicken is tender.
- Remove the chicken and chop into small chunks. Then, return the chicken to the pan with the onion mixture.
- Whisk the eggs and add them to the pan with the onion and chicken. Stir to combine.
- In a baking tin with high sides, place a piece of filo pastry, letting the edges spill over the sides of the tin. Brush with oil and add another layer. Continue adding layers, brushing each layer with oil. Keep some of the filo pastry.
- Place the chicken mixture from the pan into the pastry. Place the remaining layers of filo pastry on top.
- Bake for 30 minutes, until the pastry is golden brown.
