Ingredients

  • ( 1 1/2 medium) Chicken Breast
  • ( 150 grams) Raw chicken liver
  • ( 1 stalk) Fresh lemongrass
  • ( 2 tsp) Curry powder
  • ( 1 1/2 bunch) Fresh parsley
  • ( 3 medium) Desiree potato, peeled
  • ( 2 medium) Peeled carrot
  • ( 1 medium) Brown onion, raw and peeled
  • ( 6 cloves) Raw garlic, peeled
  • ( 1/2 cup) Reduced-fat canned coconut milk
  • ( 1 tbsp) Raw sugar
  • ( 1 L) Tap water
  • ( 1 tbsp) Vegetable oil
  • ( 4 Slices) Mixed-grain bread roll
  • ( 1 long) Raw red chilli
  • ( 1 tsp) Salt
  • ( 1/4 cup) Lemon juice

Method

  1. In a bowl, mix chilli paste with salt.
  2. Heat in a microwave for 30 seconds.
  3. Squeeze lemon and mix.
  4. In a large saucepan, cover the chicken livers with water. Add remainder of lemongrass stalk and 1 teaspoon salt. Cover and boil for 5 minutes.
  5. Drain and chop livers into large pieces. Set aside.
  6. Heat oil in a large deep pot. Fry shredded lemongrass and parsley stalks until brown.
  7. Add chicken pieces and fry for 2–3 minutes. Add curry powder and chopped parsley. Stir and cover, cook for five (5) minutes.
  8. Add water and boil for 10 minutes.
  9. Add potatoes, carrots, and onions. Add sugar and 1 tablespoon salt. Bring to the boil. Cover and boil for 15 minutes, or until tender.
  10. Add coconut milk and chicken liver. Cook for five (5) minutes. Salt to taste.
  11. Serve with bread rolls and chilli paste mix to dip, or with rice.
