Ingredients
- ( 4 small) Raw chicken drumstick
- ( 2 medium) Red capsicum, fresh
- ( 2 medium) Tomato
- ( 2 cloves) Raw garlic, peeled
- ( 3 tbsp) Olive oil
- ( 1/2 tsp) Dried oregano
- ( 1/2 tsp) Cooking salt
- ( 1 cup) White rice, raw
Method
- Cook the rice, following the instructions on the packet.
- Slice the peppers into thick wedges.
- In a medium pan, add the chicken to the pan. Brown on all sides.
- Add the garlic and cook for 2 minutes.
- Add the tomatoes, peppers, and 200mL of water to the pan. Cook for 15 minutes on high heat.
- Serve with cooked rice.
