Ingredients
- ( 6 slice) Mixed-grain bread
- ( 7 medium) Tomato
- ( 1 bunch) Fresh basil
- ( 7 tbsp) Olive oil
- ( 1 medium) Red onion, peeled
- ( 2 cloves) Raw garlic, peeled
- ( 1/3 cup) White-wine vinegar
- ( 1/2 tsp) Cooking salt
- ( 1/2 tsp) Ground black pepper
Method
- Cut the tomatoes into large cubes, place in a mixing bowl and season with the salt and pepper. Allow to sit for 10 minutes as you prepare the rest of the dish.
- Remove the tomato from the bowl. Keep the liquid in the bottom of the bowl to make the dressing.
- Cut the onion into small cubes and crush the garlic.
- Add the onion, garlic, oil, and vinegar and mix to combine.
- Toast the bread and tear it into chunks.
- Return the tomatoes, bread, and basil to the bowl and combine.
