Ingredients
- ( 1 cup) Reduced-fat Paneer
- ( 1 medium) Green capsicum, raw
- ( 1 tsp) Curry powder
- ( 3 tbsp) Vegetable oil
- ( 1 medium) Brown onion, raw and peeled
- ( 2 cloves) Raw garlic, peeled
- ( 3 tsp) Raw ginger, peeled
- ( 2 medium) Tomato
- ( 1 tsp) Dried chilli flakes
- ( 1 tsp) Ground black pepper
- ( 1 tsp) Cooking salt
- ( 1 cup) White rice, raw
Method
- Cook rice, following instructions on the packet.
- Peel the onion and cut into small cubes. Crush the garlic and grate the ginger.
- Heat oil in a large pan. Add diced onion, crushed garlic, and grated ginger. Cook for 10 minutes until the onion is soft and sweet.
- Add the curry powder, salt, pepper, and chilli flakes. Stir through for 30 seconds.
- Add the diced tomatoes and cubed capsicum. Then add 250mL of water. Cook for 5 minutes.
- Add the paneer (cheese) and cook for 5–8 minutes.
- Serve with the rice.
