Ingredients
- ( 4 medium) Banana
- ( 1/3 cup) Unsalted Cashew Nuts
- ( 15 grams) Butter
- ( 1 tbsp) Brown Sugar
- ( 2 tbsp) Lime Juice
- ( 1/2 cup) Low Fat Greek Yoghurt
Method
- In a dry pan (a pan with no oil) dry roast the cashews until they are golden brown. Keep an eye on them because they can go from golden to burn in the blink on an eye.
- Once golden brown roughly crush them. You can do this in a mortar and pestle or simple place them into a clean towel and crush them with a coffee mug.
- pan, be careful not to overheat the butter as it will burn. The foamy bubbles are the sign the butter is at the right temperature to cook in.
- Peel the Bananas and slice them in half widthways and again length ways.
- Heat the butter in a Sprinkle half the brown sugar evenly over one side of all the bananas and place the side with the brown sugar downwards in the pan. Cook for 2-3 minutes or until they start to brown.
- As they are cooking sprinkle the remaining sugar on the tops of the banana pieces.
- Flip the banana pieces and cook for another 2-3 minutes. It is important to not overheat your pan so you may need to reduce the heat through the cooking process. And the sugar may burn and become bitter. What you are wanting is a nice caramelisation that is golden brown and gives a crispy texture to the bananas.
- When both sides are golden brown remove from the heat, place each portion on a plate, top with a spoonful of yogurt, then the cashews and finally the lime juice. For extra flavour you could zest the lime over the dessert and add some cinnamon if you like.
