- ( 4 medium) Zucchini, unpeeled
- ( 10 stems) Fresh spring onion
- ( 2 cloves) Raw garlic, peeled
- ( 4 large) Egg
- ( 3/4 bunch) Fresh parsley
- ( 1 cup) Breadcrumbs
- ( 1 cup) Reduced-fat fetta cheese
- ( 1 tsp) Ground black pepper
- ( 1/2 tsp) Cooking salt
Method
- Preheat oven to 180 degrees (C).
- Grate the zucchinis into a bowl.
- Using a cloth, sieve or colander, squeeze the grated zucchinis and throw away the liquid.
- Slice the spring onions into thin slices. Add them to the zucchini, then add the remaining ingredients.
- Mould the mixture into patties (1/4 cup size is best) and place on a baking tray.
- Bake for 20 minutes at 180 degrees Celsius (C), until golden brown.
